Choco-Butterscotch Bars:
Bake-Off Cookie Recipe Favorite

Choco-Butterscotch Bars, like other cake mix cookie recipes, are timesavers. The cake mix makes putting together the recipe easy because the mix saves you steps.

These bars, in particular, don’t even require that you use an electric mixer, but just a wooden spoon. Combine the cake mix and a few additional ingredients to make the bars – and then whip up the simple glaze while the cookies are in the oven.

Furthermore, this recipe is not only a winner when it comes to simplicity, but also in nationwide popularity. It was a favorite in the iconic Pillsbury Bake-Off Contest 22 in 1971, the year Pecan Pie Surprise Bars won overall top honors.

Choco-Butterscotch Bars

Prep time: 10-15 minutes

Bake time: 23-28 minutes

Makes 36 bars

Ingredients

Bars

1 package (16 - 18 ounces) yellow cake mix

1 package (3.4 ounces) instant butterscotch pudding mix

½ cup vegetable oil

2 large eggs

1 cup (6 ounces) semi-sweet chocolate chips

1 cup sweetened flaked coconut

½ cup chopped nuts

 

Glaze

1 cup (6 ounces) butterscotch chips

3 tablespoons milk

2 tablespoons butter or margarine

 

Topping

½ cup chopped nuts

Directions

  1. Preheat oven to 350º F. Lightly grease 13 x 9 baking pan with vegetable spray.

  2. In a large mixing bowl, combine cake mix, pudding mix, oil, and eggs, and vegetable oil, stirring by hand with a large spoon until well blended until dough is moistened and dry ingredients have been well absorbed. Sir in chocolate chips, coconut, and ½ cup chopped nuts.

  3. Press mixture into prepared pan. Bake for 23-28 minutes until golden brown.

  4. Meanwhile, prepare the glaze. In a small saucepan, combine butterscotch chips, milk, and butter. Melt over low heat, stirring until smooth.

  5. Remove the baking pan from the oven. Drizzle glaze over warm bars until the surface is thoroughly covered. Sprinkle ½ chopped nuts over glaze.

  6. Allow bars to cool completely on a wire rack.

  7. Cut bars into 1 ½-inch squares.

  8. Store bars in an airtight container using waxed paper to separate layers.

A Special Baking Tip from The Elf

Since the time that Choco-Butterscotch Bars recipe was first released, microwave ovens have become a fixture in the kitchen. If you choose, you can melt glaze ingredients in the microwave. Combine butterscotch chips, milk, and margarine in a microwave-safe bowl. Heat the ingredients on high for 30 seconds and then remove to stir. Return the bowl to the oven and repeat until the ingredients are melted and smooth.
