Feature: Pecan Sandies: Easy Drop Cookie Recipe
In honor of National Pecan Day (April 14) – make your own Pecan Sandies. Pecan Sandies are a cross between a rich shortbread and a drop cookie. The buttery richness of these cookies is reminiscent of shortbread. Yet you can use margarine rather than butter in this recipe and still enjoy a lush flavor, thanks to the pecans which add depth to the flavor of the dough. Most shortbread, however, is baked in one pan and then cut into pieces. Sandies are individually-formed cookies. Like other drop cookies, Sandies are shaped by “dropping” or pushing spoonfuls of cookie dough onto a baking sheet.
